A Really Great Sirloin Steak Marinade


1/3 cup vegetable oil

¼  cup each: red wine vinegar, soy sauce

1 small onion, minced, about ¼ cup

1 clove garlic, minced

1 TBS Dijon mustard

¼ tsp. each: oregano, basil, thyme

1 large or 2 medium sirloin steaks, each about 1-inch-thick, about 2 pounds total

Blend all ingredients for marinade in a small bowl.  Place steak in a shallow glass dish.  Pour marinade over and turn to coat.  Cover and refrigerate, turning occasionally.  Marinate at least 4 hours or overnight.

Remove steak from fridge 30 minutes before cooking.  Prepare a charcoal grill with hardwood charcoal.  When coals are covered with a fine gray ash, put steak on grill and grill about 5 minutes per side for rare, turning once.   Note> A gas grill works as well for this!

Let steak rest about 5 minutes.   Slice steak against grain into about ½-inch-thick slices and serve.

2 pounds sirloin steak, trimmed and cut into 1 ½-inch cubes

Steak Marinade (above)

8-10 oz. white mushrooms or baby portobellas, stemmed

1 red onion, cut into thick wedges

2 bell peppers (any color), cut into 1 ½ -inch pieces

Reserve about ¼ cup of the marinade for the veggies.  Marinate steak pieces in remaining marinade for 2-4 hours in refrigerator.

About thirty minutes before grilling, toss vegetables with the ¼ cup of reserved marinade, in a large microwavable bowl.   Cover with plastic wrap and let sit at room temperature for 30 minutes.  Then place bowl in microwave and cook for 3-6 minutes, shaking bowl to redistribute vegetables halfway through cooking.

Preheat a charcoal or gas grill for medium-high, indirect grilling (for a charcoal grill, build a 2-level fire.  For gas grill, pre-heat all burners to hot, scrape to clean, then leave one burner on high heat and reduce or turn off remaining burners)

Uncover vegetables; remove meat from marinade.  Thread on to metal skewers.  Sear kebabs on all sides first, then move to cooler part of the grill and continue cooking until meat is well browned and vegetables are tender, about 14-16 minutes in total.
